Laboratory of Food Biological Safety

 

Laboratory of Food Biological Safety was founded in 2017. The main scientific direction of the laboratory is the study of the properties of biologically active substances synthesized by lactic acid bacteria, as well as the development of new technologies for introducing these microbes into livestock breeding, medicine, food industry and fodder production. 

 

RESEARCH MAIN DIRECTIONS

  • Preservation of the gene pool of lactic acid bacteria and yeasts from Armenia and Artsakh
  • Investigation of physiological and biochemical properties of bacteria and their identification. Study of the microorganisms of unique commensal microflora of the women, living in Armenia, and creation of biopharmaceuticals based on them
  • Development of the technology for the production of safe bioprotective preparations to be used in bioconservation of foodstuffs
  • Study of the properties of bacterial metabiotics to be used in animal breeding, agriculture and medicine    

 

MAIN INVESTIGATION RESULTS

  • From the milk and dairy products, made of milk of different domestic animals from the rural households of diverse regions of Armenia and Artsakh lactic acid bacteria with probiotic properties have been isolated and investigated.
  • A rich collection of dairy products starter microorganisms, bacteria with probiotic properties typical of human microbiome was created. Identification of lactic acid bacteria and yeasts has been carried out.
  • Technology for the production of antimicrobial biopreparations from lactic acid bacteria and yeasts was developed. The antimicrobial activity of these preparations against food spoilage microorganisms was shown.
  • For the first time the biodiversity of the probiotic microorganisms isolated from the genitourinary system and breast milk of the Armenian women has been studied.
  • Hydrogen peroxide-producing lactic acid bacteria strains have successfully been tested as biopreservatives to extend the shelf life of ground meat in refrigerating conditions. By the use of genetic mutations, the cultural, antimicrobial, and technological properties of lactic acid bacteria were improved.
  • Production of “Narine” dairy product was organized in the Center.    

 

MAIN OBJECTIVES AND TASKS

  • To organize production for dry starters of the Armenian dairy products, biopharmaceuticals and biopreservatives in the Center.
  • To continue isolation and study of new probiotic microorganisms typical of human microbiome and new starters for dairy products.
  • To increase probiotic and technological properties of lactic acid bacteria by the use of genetic mutations and microadditives.
  • To create functional biopreparations of new generation for the improvement of human health.
